Pies Pies Pies

For Thanksgiving this year I made 5 pies!  2 for my family and 3 for my husbands family.. and they pretty much turned out delicious!  I made 2 pecan, 2 pumpkin, and 1 sweet potato.  I did have to put the pumpkin in longer than I expected but still good! 

Pumpkin Pie

1 egg
1 Tbl flour
3/4 cups sugar
1/2 tsp salt
1.5 cups pumpkin puree
1.5 cups evaporated mil
1/2 tsp cinnamon
1/2 tsp ginger
1/4 tsp nutmeg
2 Tbl light corn syrup
1 9in. pie crust (i bought the refridgerated kind)

Preheat oven to 450.  Add sugar gradually to pumpkin puree.  Beat well and stur in flour, sat, and spices.  Stir in corn syrup and beat well.  Stir in slightly beaten egg.  Slowly add evaporated milk, mix until well blended.  Pour batter into unbaked pie shell.  Bake at 450 for 15min then bake at 325 for 60min or until the knife comes out clean from the center of pie.

Pecan Pie

1 9in unbaked pie crust
3 eggs, beaten
1 cup dark corn syrup
1 cup sugar
1/4 cup melted butter
1 tsp vanilla extract
1 cup pecan halves

Preheat oven to 350.  Beat together eggs, corn syrup, sugar, butter, and vanilla.  Arrange pecans in bottom of unbaked pie crust and pour mixture over (the pecans will float up).  Bake 1 hour or until knife come out clean from center of pie.

Sweet Potato

1 lb sweet potato
1/2 cup butter, softened
1 cup sugar
1/2 cup milk
2 eggs
1/2 tsp nutmeg
1/2 tsp cinnamon
1 tsp vanilla extract
1 9in unbaked pie crust

Boil sweet potatoes in skin 40-50min.  Run cold water and remove skin.  Break sweet potatoes apart in bowl.  Add butter, mix with mixer.  Stir in sugar, milk, eggs, nutmeg, cinnamon, vanilla extract and beat on medium speed until smooth.  Fill pie crust.  Bake at  350 for 1 hours or until knife comes out clean from center of pie.

They were delicious and one day I will make my own crust!  Try them out!

Zucchini Zucchini

Miss Ella seems to love all foods green!  Her most recent favorite is zucchini.. as long as I don't mix it with brown rice she will it as fast as humanly possible!

 Here's how to do it.

Step one: Cut zucchini in half lengthwise


Step Two: Place zucchini in a little water.. skin up.  Microwave covered for about 3minutes


Step Three: Cut the seeds and membranes out


Step Four: Cut into little pieces and put in food processor thingy

 

 Step Five: Put in bowl and feed baby!

Yummy Avocado for Baby!

Avocado Avocado Avocado

While we are having miss Ella baby try new foods.. we thought we'd throw in some avocado!
(man that is a hard word for my to type for some reason)
It is super easy and super healthy!  It contains iron. vitamin e, vitamin a, vitamin c, calcium, and a little protein and fiber!  It is best when it is fresh and it makes it more delicious.

Here's how I made it:

 First- cut the 'cado in half and use a knife to get the pit out and then use a spoon to slide out the good stuff!
 Second- put in a bowl and use a fork to mash it up (it should be soft enough that you don't need to blend it)... I added a little water to make it thinner.
 Third- separate into servings
Fourth: put in bowl and enjoy!

 She seemed to enjoy it
 But of course had to have a closer look...
...and think about it for a few minutes...
...then ask for more by sticking out her tongue!

I can't wait to give her more!  Hope this is easy enough for anyone to make!  And hey its a start to guacamole also... one day I'll make it!

Sweet Potatoes!

Ella is loving her some sweet potatoes.  I've been making her 'solid' food myself and it is going great!  It's fun to do and quicker than I thought!

She really likes apple puree but is really enjoying this new taste and texture! 

Here's how I do it:


First: Buy a sweet potato... I bought organic and I only used half at first



Second: wash, peel, and dice it



Third: Bring water to boil.  I did about 3/4 cup water for half a sweet potato.  Add the chunks and boil for about 10ish minutes.



Fourth: Let cool.  Have all or most of the steam gone from sight.. but still warm to hot.



Fifth: Blend into puree or mash into puree.



Sixth: Feed to baby!





Warning: You will be finding sweet potato on the baby for the rest of the day.. no matter how good you think you cleaned the baby off!  I couldn't believe where I kept finding orange marks on her!
